These values match what international sources mention: nowhere in the system more than 500 µm and on average below 200 µm. According to a secondary source, EN 15780:2025 contains comparable grease thickness limits for commercial kitchens for the first time. How often do you clean with heavy, moderate and light kitchen use?
The right frequency depends on how much cooking is done. A British guideline classifies kitchens by hours of use per day:

What grease layer is allowed in the extract duct of a restaurant in Heerlen?
Under the NVRL quality mark scheme, 500 µm is the intervention value and at most 200 µm may remain after cleaning. You measure with a wet film thickness gauge, with a sample behind every cooker hood and per 10 metres of duct. International sources use the same limits: nowhere more than 500 µm and on average below 200 µm.
How often should a Heerlen restaurant with long opening hours clean its duct?
